Bar Food - Grilled Lamb Cutlets with cumin and lemon
This new column celebrates the bar snack in its many and varied guises.
There are very few things that are better than grilled meat as a bar snack.
Ingredients:
6 (or as many lamb cutlets as you like). If you can't get lamb cutlets separately, you can just hack up a rack of lamb - actually it is usually cheaper than buying the nicely trimmed individual cutlets.
Salt. Oil. Cumin. Lemon Wedges.
Oil the cutlets. Heat the grill to medium-high. Grill cutlets 3-4 minutes each side (for medium). Remove cutlets from grill and sprinkle both sides with a pinch of salt and pinch of cumin. Squeeze lemon over cutlets. Serve.
Pair with: Wine - shiraz/syrah. Beer - dark or full flavored ale (e.g White Rabbit or Rogers).
